Breakfast time

Hi loves,

I love breakfast, especially when I have got lots of time to make something special and experiment with different recipes.

To give you some inspiration I’m sharing my current top 3 when it comes to breakfast. Those are very healthy, quick and give you the right amount of energy for the day.

Here we go:


  1. Cashew-Oat porridge

  • 1 cup cashews
  • 3 big medjool dates
  • zest of 1 lemon
  • 1 cup oats
  • toppings: banana, strawberry, nuts, granola, whatever you like 🙂


  • before you start make sure your cashews, oats and dates have been soaked for over 4 hours in water
  • after soaking the ingredients blend everything together till it becomes a soft cream
  • spoon in a bowl and top with whatever you like
  • enjoy 🙂

2. Blueberry – Banana pancakes

  • 1 large overripe banana
  • 2 eggs
  • 2 tablespoons of ground oats
  • handful of blueberry’s
  • cinnamon
  • coconut oil
  • toppings: honey, raspberries, peanutbutter


  • the most simple method is to put all of the ingredients (except the toppings) together in a blender, I use a nutribullet
  • after that gently spoon the blueberry’s into the mixture
  • make little pancakes out of the batter and bake them in coconut oil
  • top the pancakes with whatever you like and enjoy 🙂



3. Green smoothie

  • 1 banana
  • handful of spinach
  • handful of kale
  • 1 cm of fresh ginger
  • 1/4 avocado
  • milk of your choice, I use oat milk


  • just throw everything in a blender and blend until soft and a little creamy
  • top with whatever you like or just enjoy without toppings
